ITAMAE: Mambo Tony Sushi, a taste of Japan at the base of Monte Rosa

ITAMAE – The 7 Samurai of Japanese Cuisine makes its third stop at Mambo Tony Sushi, a sushi restaurant and take-away led by an Italian chef, offering an authentic taste of Japan with just the right fusion twist right at the base of Monte Rosa.

For an entire generation, a Japanese restaurant called “Mambo” may instantly bring to mind the grumpy expression of Marrabbio, the father of one of the most beloved TV characters from the anime Kiss Me Licia. In fact, when Tony Dimartino chose the name for his restaurant in Varallo Sesia, in the Vercelli area, he was thinking precisely of that iconic anime.

The playful reference is only the introduction to the world of sushi chef Dimartino – a world built on professionalism, humility, respect and deep knowledge of Japanese culinary techniques. These values were cultivated during his time studying under the great Chef Tatsumoto Katsuya at the Tozai Center in Milan.

With a small reading corner and space for just ten guests, the cozy restaurant creates an intimate atmosphere that transports visitors far from the surrounding Piedmontese Alps, while still subtly reflecting their presence.

Tony Dimartino chooses to use New Kenji Premium Sushi Rice for two of his signature sushi recipes, each made unique by his artistic flair. With the Marrabbio Uramaki, the chef offers his own take on California rolls: a Western-style roll with rice on the outside and nori on the inside – an ideal example of fusion cuisine; he enhances it with flavorful ingredients inspired by okonomiyaki, the Osaka-style savory pancake that Marrabbio (Licia’s father) famously cooked in the anime. With his Hosomaki, on the other hand, he guides us through the preparation of minimalist rolls using a single ingredient, such as cucumber or tuna.
